No Sugar Added Pumpkin Protein Muffins

If you have a sweet tooth and love baked goods, but want to stay on track with your weight loss goals… this is one of my favorite recipes to make for a healthy snack or even include as part of my breakfast that I know you (and your family) will be obsessed with, too!

These No Sugar Added Pumpkin Protein Muffins have officially become me and my daughter’s go-to fall treat we love to eat to start our day. I personally love making them with ingredients I already have at home, which is great so I don’t have to buy random things at the store I’ll never use again.

The recipe I’m going to share with you is made with Kodiak Cakes Buttermilk Power Cakes Mix that I love to have on hand for easy pancakes. You could totally use another protein pancake mix if you prefer, too!

Alongside other ingredients I add in with the mix… each muffin packs 7 grams of protein for just 110 calories. I opt to not add any added sugar to this recipe, except if I decide last minute to include dark chocolate chips. I personally find the ripe bananas do all the sweetening, which is great to keep it healthier for you.

And to make it extra fun, I made a batch of these in pumpkin shaped muffin molds for my daughter we picked up at the store and she was obsessed. They’re the perfect little Halloween treat for kids and adults, and they make a great grab and go breakfast or snack for the week!

I linked the molds here that I got from Michael’s if you want to make them extra festive. If you plan to use, I did find they needed to cook longer than the muffin tin. I filled the molds with batter and put them directly on a baking sheet, then in the oven. They turned out great and are fantastic for kids!

Servings: 12

Ingredients:

  • 2 cups Kodiak Cakes mix
  • 3/4 cup fairlife ultrafiltered milk (or milk of choice)
  • 2 ripe bananas mashed
  • 3/4 cup canned pumpkin
  • 1 egg
  • 1 tsp vanilla extract
  • Optional: 1/2 cup to 3/4 cup dark chocolate chips

Directions:

  1. Preheat oven to 350 degrees F and line or grease a 12 cup muffin tin (or grease your pumpkin molds).
  2. In a large bowl, mash the bananas, then whisk in the egg, pumpkin, milk, and vanilla.
  3. Add the Kodiak Cakes mix and stir until just combined.
  4. Fold in the chocolate chips, if using.
  5. Fill each muffin cup about 3/4 full.
  6. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean. (Pumpkin molds may bake a few minutes faster, so start checking at 15 minutes.)
  7. Let cool for 10 minutes before removing from the pan. Store in the fridge for up to 5 days!
